This soup is not only easy and delicious, but also nourishing for body and soul. It also gets BONUS points for having vitamins and minerals that are precursers to the hormones necessary to postpartum emotional balance!
oh, and it's delicious! This recipe is vegan but if you love ham, adding a ham bone is a lovely compliment.
Chop one onion
Peel and chop 3 large carrots
sautee the above in 2 tablespoons olive oil until soft...or NOT (it actually doesn't matter if you do)
add one bag of split peas
add ½ pound ham, ham bones, or both (or omit if you prefer-I never make it with the ham for myself)
add 6-7 cups water
vegetable or chicken bullion
1 can coconut milk
1.5 Tablespoons curry powder
1 teaspoon pepper
Simmer for an hour or until soup thickens and the peas begin to fall apart.
Serve with crusty bread and voila. Dinner is served.
You can also just dump all the ingredients into the crockpot together in the morning and your soup will be done by dinner time. If you remember to turn the damn thing on!
